Japanese-Style Chicken Wings

Japanese-Style Chicken Wings

12 wing    Chicken wings  
1 clove    garlic  
1 piece    ginger, about 1" x 1"  
1/2 cup    rice wine or sake  
1/2 cup    soy sauce  
1/4 cup    firmly packed brown sugar  
1/4 tsp    red pepper flakes  
 
1 Place the wings in a large bowl.
2 Drop the garlic and the ginger through the feed tube of your food processor as the motor is running, with the metal blade in place. Process until finely chopped, about 10 seconds. Scrape down the bowl and add the remaining ingredients and process 5 seconds.
3 Pour this marinade over the chicken in the bowl,toss to coat. Cover, and refrigerate for 3 or more hours.
4 Preheat the oven to 350*. Line a shallow pan with foil.Arrange the wings in the pan evenly. Reserve the marinade.
5 Bake the chicken, uncovered, turning and basting them with the reserved marinade every 15 minutes. Bake until golden brown and slightly crusty, about 1 hour 15 minutes.
