Vegetarian Soup and Vegetarian Chili



Here are bountiful vegetarian soup and chilis that you will fix over and over. A few recipes call for a basic stock base, and I have included a low sodium, vegetarian stock here that is perfect for this. Make up a batch of stock when you have some time, and freeze it in resealable bags, 1-2 cups each, to have ready when you need it.
Most of these recipes are low in salt, and fix in a flash. Soups and chilis are completely satisfying. I can make an entire meal of soup with bread.

Soups are always welcomed by my guests, and these recipes are frequently requested. Chilled vegetarian soups are excellent for entertaining, because they can be made in advance, and as they chill their flavors meld together.

Vegetarian chili is welcome any time of year. Be sure to make extra to stuff baked potatoes for the next day.
