Chinese Almond Cookie Recipe

One of our favorite ethnic cookies is this Chinese almond cookie recipe.
Moist and chewy, if you under bake them just a bit. Actually, that is the way I prefer all my cookies, warm and chewy.

This Chinese Almond Cookie recipe make perfect cookie jar fillers. When you would like to take a platter of cookies, they plate very nicely and transport well.

Sometimes I freeze these and take out just a few from the freezer and pack into lunches. They really hold up well.

It's possible to lower the sodium content even more in this Chinese almond cookie recipe when you choose to use featherweight baking powder, which is sodium free. I find that it substitutes well teaspoon for teaspoon.

Almond Cookies

 Almond Cookies
 
 
1 1/2 cups    flour  
1 cup    ground almonds  
1/2 tsp    baking soda  
3/4 tsp    baking powder  
2   eggs  
1/2 lb    lard  
1/4 cup    brown sugar  
3/4 cup    sugar  
1 Tbs    almond extract  
1/4 cup    almonds, sliced  
 
1 Preheat oven to 350*
2 Mix one egg with a little water, reserve for later.
3 Sift flour with baking soda and baking powder, reserve. Cream together lard, sugars, remaining egg and almond extract. Add ground almonds and flour mixture. Mix well.
4 Roll dough into 1" balls, then place on cookie sheet 2" apart. Place one almond slice on each cookie, pressing in slightly. Brush each cookie with reserved egg wash.
5 Bake for 15 minutes, until pale brown.
