Apricot Chicken Recipe - Baked Chicken Recipes | Baked Apricot Chicken Breasts | | | | | | 3 Tbs | | olive oil | | | 4 | | skinless chicken breasts | | | 1 | | chopped onion | | | 2 | | cloves garlic, minced | | | 15 oz | | apricot preserves | | | 3 Tbs | | tomato paste | | | 3 Tbs | | balsamic vinegar | | | 2 Tbs | | lemon juice | | | 1/4 tsp | | freshly ground black pepper | | | | | | | 1 | Preheat your oven to 375* | | 2 | In a small saucepan, combine the apricot preserves, tomato paste, vinegar, juice and pepper. In the same skillet, saute the chicken breasts for a minute or two on each side, just to sear the juices in.
