Apricot Chicken Recipe

Use either boneless or bone-in chicken breasts for this entree.

Add chopped, dried apricots if you have any on hand to the preserves. They will plump up as they cook.

All you need to make a complete meal is a simple salad, and maybe a vegetable such as green beans.

You will find that this baked chicken recipe is simple enough for weekday suppers, yet elegant enough for weekend company.

I like to use any leftovers for a quick tossed chicken salad the next day.



Apricot Chicken Recipe - Baked Chicken Recipes

 Baked Apricot Chicken Breasts
 
 
3 Tbs    olive oil  
4   skinless chicken breasts  
1   chopped onion  
2   cloves garlic, minced  
15 oz    apricot preserves  
3 Tbs    tomato paste  
3 Tbs    balsamic vinegar  
2 Tbs    lemon juice  
1/4 tsp    freshly ground black pepper  
 
1 Preheat your oven to 375*
2 In a small saucepan, combine the apricot preserves, tomato paste, vinegar, juice and pepper. Mix well and simmer for 5 minutes. Remove from the heat and reserve.
3 Pour the oil into a skillet and saute the onion and the garlic for 2 minutes, until clear, but not too browned. Reserve. In the same skillet, saute the chicken breasts for a minute or two on each side, just to sear the juices in. Remove from the skillet and place in a baking dish.
4 Add the onions and garlic with the preserve mixture. Mix together and pour over the chicken breasts.
5 Bake the apricot chicken recipe for 15 minutes for boneless breasts and 25 minutes for bone-in breasts.
