Asian Vegetable Slaw Salad Recipe

This is a great salad recipe that can be quickly made up ahead, and then refrigerated for up to 2 days in advance.



Everyone loves how colorful this Asian Vegetable Slaw recipe looks, and it adds a nice freshness to your meal.

By using homemade mayonnaise, (recipe below) you can significantly reduce the amount of sodium in this Asian salad recipe.

 Asian Vegetable Slaw
 
 
1/4 cup    mayonnaise (Use this Homemade Mayonnaise recipe and cut the sodium by 100mg! )  
1 Tbs    mirin  
1 Tbs    rice vinegar  
1 tsp    soy sauce  
1 Tbs    fresh lemon juice  
1   jalapeno, seeded and minced  
1 cup    finely shredded red cabbage  
1 cup    finely shredded napa cabbage  
1 cup    grated carrot  
1 cup    julienned jicama  
1 cup    julienned daikon  
1/2   small cucumber, sliced thinly  
2   scallions, sliced thinly  
1 cup    mung bean sprouts  
 
In a large bowl, mix the mayonnaise, mirin, vinegar, soy sauce, lemon juice and the jalapeno. Add the remaining ingredients and toss well.
