Easy Asparagus Recipe with Mushrooms and Shallots



We really like this asparagus recipe, and we never get tired of this really versatile vegetable.


It may be that you just need a new and exciting asparagus recipe to add new life to your summer meals. And that is what this simple vegetarian recipe will do for you.

We started with just a simple sautéed mushroom recipe, and then tried several different green vegetables to add some interest and texture to what could be a boring vegetarian side dish.


This asparagus and mushroom recipe is one of the easiest vegetarian recipes that goes well with any meal.
When the weather is nice, I like to grill the asparagus on the outdoor grill, and at the same time the mushrooms can be sautéed in a small grill-rated saute pan.

This recipe is best with both fresh asparagus and fresh mushrooms.

Depending on what your main course is, a light sprinkling of grated parmesain cheese adds a nice zip to this asparagus recipe, too.


 Asparagus Mushroom Fricassee
 
 

1 lb    fresh asparagus  
2 tsp    olive oil  
3 Tbs    unsalted butter  
1   shallot  
12 oz    mushrooms  
1/2 cup    dry white wine  
1/4 tsp    freshly grated nutmeg  
 
1 Preheat your oven to 450*
2 Wash and trim the asparagus. Arrange the asparagus on a rimmed baking sheet. Drizzle the oil over and toss to coat. Roast in the oven for 10 minutes.
3 While the asparagus roasts, heat the butter in a skillet over medium heat and sauté the shallot for one minute. Add the sliced mushrooms and continue to cook until the vegetables begin to brown, about 5 minutes.
4 Add the wine and cook for an additional 2-3 minutes, until most of the wine is absorbed. Sprinkle with the nutmeg and remove from heat.
5 Place the asparagus on a serving plate and top with the mushrooms sauté.
