We have served this as a cold salad on occasion, and it's a really good alternative to typical green leaf salads. This easy recipe packs well for a picnic, too. As a low sodium recipe, it can't be beat for flavor... under 10 mg of sodium per serving! |
Cranberry Barley Pilaf Recipe | Pilaf with Pizzazz! | | | | | | 4 Tbs | | butter | | | 1 cup | | chopped onions | | | 1/2 cup | | chopped celery | | | 1 | | garlic clove, minced | | | 1 cup | | barley | | | 3 cups | | low-sodium vegetable broth | | | 1 cup | | coarsely chopped cranberries | | | 1 Tbs | | honey | | | 1/2 cup | | chopped pecans | | | | | | | 1 | Heat the butter in a large saucepan and cook the onion, celery and garlic over medium heat for 3 minutes. | | 2 | Add the barley and continue to cook for 5 more minutes until the barley is beginning to turn golden. | | 3 | Stir in the broth, and bring to a boil.
