Cranberry Barley Pilaf Recipe



This barley recipe is outstanding! We love this barley pilaf as a side dish, and sometimes we enjoy it with just a simple salad as a complete vegetarian meal. After all, barley and cranberries are a natural pair of great for you foods.

This pilaf recipe gets it's color from fresh cranberries, but we have found that you can easily substitute dried cranberries if fresh are not available. They will plump as the barley recipe cooks.

You will love the texture of this barley and cranberries pilaf recipe. There is so much going on with so few ingredients!



This barley recipe for barley pilaf may be enjoyed either hot or as a cold salad.
Most barley recipes cook up fairly quick, and this recipe for barley pilaf with cranberries is no exception.

We have served this as a cold salad on occasion, and it's a really good alternative to typical green leaf salads. This easy recipe packs well for a picnic, too.

As a low sodium recipe, it can't be beat for flavor... under 10 mg of sodium per serving!



Cranberry Barley Pilaf Recipe

 Pilaf with Pizzazz!
 
 
4 Tbs    butter  
1 cup    chopped onions  
1/2 cup    chopped celery  
1   garlic clove, minced  
1 cup    barley  
3 cups    low-sodium vegetable broth  
1 cup    coarsely chopped cranberries  
1 Tbs    honey  
1/2 cup    chopped pecans  
 
1 Heat the butter in a large saucepan and cook the onion, celery and garlic over medium heat for 3 minutes.
2 Add the barley and continue to cook for 5 more minutes until the barley is beginning to turn golden.
3 Stir in the broth, and bring to a boil. Cover, reduce heat and simmer for 35 minutes.
4 Stir in the cranberries and honey, continuing to cook for 10 minutes. Stir in the pecans. Remove from heat and let stand, covered, for 10 minutes.
