Beef Pot Roast Recipe

Beer and Onion Pot Roast

2 1/2 lbs beef chuck roast
1 Tbs vegetable oil
1/4 tsp pepper
2 Tbs unsalted butter
4 onions
2 garlic cloves
1/2 cup low sodium beef broth
1/2 cup beer; any type - substitute apple juice if desired.
1 Tbs brown sugar
1 Tbs balsamic vinegar
2 tsp cornstarch
1 Trim the roast of all visible fat, then cut it into 2-3 large pieces that will fit nicely into your crockpot.
2 Peel the onions and slice. Peel and mince the garlic.
3 In a large skillet, heat the oil over medium heat. Add the beef and sprinkle it with the ground pepper. Cook the beef over medium heat, turning it once, until browned on all sides, about 5 minutes. Remove to crockpot.
4 Add the butter to the skillet and then the onions. Cook, stirring often, until lightly browned. Add the garlic and cook for one more minute. Remove and place in the crockpot.
5 Into the skillet, pour the broth, beer, sugar and vinegar. Stir well, then pour over all into the crockpot.
6 Cover the crockpot, and cook on low for 7 hours, or until the beef is tender. Remove the beef and the onions to a platter, and cover with foil to keep warm.
7 Skim the fat off the liquid, and pour into a saucepan. Heat over medium heat to a boiling.
8 Mix the cornstarch with a little water in a small bowl until smooth. Add a little of the cooking liquid to it, then pour the cornstarch mixture SLOWLY into the pan. Stir and cook until slightly thickened.
9 Slice the roast and return to the platter. Pour the gravy over the roast and onions and serve.
