Elegant Beef Roast



When you slice this beef roast into serving sections, your guests will be in awe of your cooking skills!

Because of the clever use of carrot strips, each slice will be decorated with a carrot "ribbon". Talk about special!

And this is one of the best easy beef recipes. Simply brown it, and place it in your crockpot and let your slow cooker do all the work for you, while you take all the credit for how delicious it tastes.

This recipe is naturally low in sodium, and there is no added salt to this healthy crockpot recipe.

 Decorated Beef Roast
 
 
When sliced, this remarkable roast reveals a striking decoration of carrot strips woven through the meat. Lovely presentation!
 
2   carrots  
3 lbs    beef bottom round roast  
2   garlic cloves  
2 Tbs    olive oil  
1/4 tsp    pepper  
1   onion  
1   celery  
15 oz    canned peeled tomatoes  
1 cup    red wine  
1/2 tsp    oregano  
1/2 tsp    basil  
1/2 tsp    thyme  
1   bay leaf  
 
1 Peel the carrots, then slice each into four long strips. Cut the garlic into long slivers. Chop the onions and the celery. Drain the tomatoes. Reserve all.
2 Using a long, thin knife, poke 8 evenly spaced holes all the way through the roast, beginning at the flat faced side, following the grain of the meat.
3 Insert the carrot sticks into these holes. Using the tip of the knife, make shallow incisions evenly across the meat and insert the garlic slivers into these holes.
4 In a large skillet, heat the oil and brown the roast on all sides to sear. Remove from heat an place the roast into the crockpot.
5 In the skillet, add more oil if necessary, and cook the onions and celery until soft. Remove to crockpot.
6 Into the skillet, pour the tomatoes, wine and all the seasonings. Stir and break up the tomatoes. Pour over the roast and vegetables in the crockpot.
7 Cook on low for 8-10 hours.
