Old Fashioned Beef Vegetable Stew

This Beef Vegetable Stew is one of the easiest of all the beef crockpot recipes.

By taking advantage of seasonal specials and watching the ads plan to buy your beef when it is on sale.

Hint: Use any leftovers to make a beef pot pie for another yummy meal.

Very tender and moist is how this simple crockpot recipe will turn out for you.

The secret of non-soggy vegetables is the use of a foil packet. This keeps the vegetables out of the moisture and gently steams them tender.

Try a variety of different vegetables and take advantage of seasonal specials. Use what vegetables are in season.



It's amazing how kids will eat up their vegetables when you serve up a fine stew like this recipe.

Old Fashioned Beef Vegetable Stew

2 Tbs    vegetable oil  
2 lbs    beef bottom round  
1/4 tsp    pepper  
1 cup    low sodium beef broth  
3/4 cup    water  
1 tsp    Worcestershire sauce  
2 Tbs    chopped parsley  
1 tsp    marjoram  
1 tsp    thyme  
1   bay leaf  
2   potatoes  
2   carrots  
2   celery ribs  
1/2 lb    green beans  
1   onion  
2 Tbs    unsalted butter  
2 Tbs    flour  
 
1 Cut the beef round into 2" cubes, or smaller if desired. Heat the oil in a large skillet over medium heat, and add the beef. Brown well on all sides and remove to the crockpot.
2 Add the broth, water, Worcestershire sauce, and seasonings to the skillet, and cook for 2 minutes, scrapping up the browned bits from the beef. Pour this into the crockpot.
3 Prepare all the vegetables: Peel and cut the carrots into 1/2" thick rounds, peel and slice the onion, slice the celery, cut the potatoes into 1/2" cubes and trim the green beans, cutting them into 1/2" sections.
4 Place the vegetables into a foil packet, and place on top of the beef in the slow cooker.
5 Cover and cook on low setting until the meat is tender. This may take up to 8 hours.
6 Using a slotted spoon, transfer the meat and vegetable packet onto a serving platter.
7 In a medium saucepan, melt the butter and add the flour. Cook and whisk for one minute, do not let it brown. Add the liquid from the crockpot and stir until smooth. Cook over medium heat until slightly thickened.
8 Open the vegetable packet and scatter over the beef on the platter. Pour the sauce from the pan over the stew. Serve.your Old Fashioned Beef Vegetable Stew.
