Easy to fix Broccoli Casserole with Cheese

Simple, yet extraordinary broccoli casserole with sharp cheddar has rave reviews! One of our family favorite broccoli recipes and soon to be one of yours, too.

This is an excellent new way to present this strong tasting vegetable. Even picky eaters will ask for seconds!

For a variation, try topping this broccoli recipe with canned french onions just before serving it.

This is a super party recipe because it pulls together really fast, and can be made the day before.



I make this broccoli recipe with regular sharp cheddar cheese, although you can use a low sodium cheese if you prefer.

The total sodium per serving is only 388mg, which is still low enough for some of us, although you may have different no salt needs.

I just have not found a sharp cheddar that gives the same flavor punch that is a true low sodium cheese.

Betty's Broccoli Casserole

 Betty's Broccoli casserole
 
 
2 lbs    fresh broccoli  
1   can low sodium cream of celery soup  
1   can sliced water chestnuts  
1/2 lb    grated sharp cheddar cheese  
2   eggs  
 
1 Preheat oven to 350*
2 Wash the broccoli and remove large stems. Cut the tops into bit-sized sections. Steam the broccoli until tender-crisp. Rinse with cold water.
3 In a medium bowl, beat the eggs. Mix in the soup, water chestnuts and cheese.
4 Put the broccoli into a well greased two quart baking dish. Pour the sauce over the broccoli, and toss to mix.
5 Bake in the preheated oven for 30 minutes.
