Broccoli Recipe with Orange Sauce


Once it was difficult to get the family to eat more healthy meals. Especially a broccoli recipe, since this particular vegetable has such a strong flavor.

After much experimentation, I discovered this easy to fix broccoli recipe. Only TWO ingredients, and in just a few minutes this dish will be on the table.

You can feel thrifty, too because you will be using the broccoli stems that in other recipes you may just toss out.

A very low fat recipe. And notice that it hardly contains any salt at all. It is a very low sodium recipe, one of the easiest vegetarian recipes ever.

This simple vegetarian recipe is easily doubled when you are cooking for more than a small family meal.
Broccoli with Orange Sauce

 Broccoli and Orange Sauce
 
 
1 lb    fresh broccoli  
1 cup    orange juice  
 
1 Wash broccoli and remove all stems, reserving for next step.
2 Cut stems into 2mm slices with knife or in your food processor.
3 Pour orange juice into a sauce pan. Heat over medium heat and add the stem slices. Simmer for 10 minutes, until tender.
4 Remove from heat and puree in your food processor fitted with the metal blade, until smooth. Reserve.
5 Steam the broccoli flowerettes until tender, about 4 minutes. Rinse with cold water and drain.
6 Return the broccoli along with the puree to the saucepan and heat. Season with salt and pepper, if desired.
