Healthy Cabbage Soup Recipes

Cabbage Soup diet Recipes

Crazy Cabbage Soup
2 potatoes
2 cups low sodium vegetable broth
2 cups water
1 green cabbage
2 leeks
1/2 tsp paprika
1/2 cup milk
1 tsp balsamic vinegar
1 Peel and chop the potatoes. Shred the cabbage (you should have 4 cups). Chop the leeks (white part only).
2 In a large saucepan, bring the potatoes, broth and water to a boil. Reduce heat and let simmer for 15 minutes, or until the potatoes can be easily pierced with a fork..
3 Stir in the shredded cabbage, (reserve just a handful of shredded cabbage to top the finished soup) the chopped leeks and the paprika. Cover, and simmer for 30 minutes. Remove from the heat and stir in the milk and vinegar.
4 Working in batches, puree the soup in a blender or food processor until smooth. Return to pan and gently heat through.
4 Either pour your soup into a main serving bowl, or into individual bowls for serving. Sprinkle with the reserved cabbage.
