Say "Cheese" Cheddar Cheese Soup

Say Cheese Soup

 Say Cheese Cheddar Soup
 
 
1   onion  
1/2 tsp    salt  
2 Tbs    vegetable oil  
5   parsnips  
3   potatoes  
3 cups    water  
1/4 tsp    fennel seeds, ground  
1/4 tsp    ground nutmeg  
3 cups    sharp cheddar cheese  
3 cups    milk  
 
1 Chop the onion and reserve. Peel and dice the parsnips and potatoes, reserve.
2 In a saucepan, saute the chopped onion and the salt in the oil until translucent. Add the parsnips, and stir and cook gently for 5 minutes.
3 Add the potatoes and the water, bring to a boil over medium heat, then reduce heat to simmer the soup for 12 minutes. Remove from the heat.
4 Stir in the nutmeg, fennel and the cheese. When the cheese has melted, slowly add the milk.
5 Puree the soup in a food processor fitted with the metal blade, or in a blender. Gently reheat it being careful not to let it boil. Serve hot.
