Say "Cheese" Cheddar Cheese Soup

Peel and dice the parsnips and potatoes, reserve. | | 2 | In a saucepan, saute the chopped onion and the salt in the oil until translucent. Add the parsnips, and stir and cook gently for 5 minutes. | | 3 | Add the potatoes and the water, bring to a boil over medium heat, then reduce heat to simmer the soup for 12 minutes. Remove from the heat. | | 4 | Stir in the nutmeg, fennel and the cheese. When the cheese has melted, slowly add the milk. | | 5 | Puree the soup in a food processor fitted with the metal blade, or in a blender. Gently reheat it being careful not to let it boil.
