Chicken Salad with Grapes

Noels Chicken Salad

Noel's Chicken Salad with Grapes
2 eggs
2 cups chicken, cooked and cubed
1 cup celery, sliced
1 Tbs lemon juice
1/2 cup low sodium mayonnaise
1 cup seedless grapes, sliced in half or quartered.
1/2 cup cashews, rough chopped
1 Add the whole eggs, in their shells, to a pan with enough water to cover. Cover pan and cook over high heat until water just begins to boil. Remove the pan from the heat and cover it. Let the eggs sit exactly 15 minutes in the pan with the hot water. After 15 minutes, Rinse the eggs with cold water.
2 When eggs are cool enough to handle, peel them carefully and roughly chop.
3 Mix the chicken with the low sodium mayonnaise, sliced celery, lemon juice, and the grapes.
4 Carefully fold in the eggs and the nuts.
Servings: 8
