Very Easy Chicken Scaloppine

How EASY is this? Very few ingredients, on your table in under 30 minutes, and one pan clean up.

Sometimes I double the sauce part of this recipe, my family really likes this.

Adding some lemon zest to the sauce really brings out the lemon flavor of this chicken scaloppine recipe.

One of the most important kitchen tools is the Microplane Grater/Zester
This amazing little helper, the Microplane Grater/Zester, has a multitude of uses from grating cheese to chocolate, and certainly zesting all manor of fruits without the bitter taste.
Chicken (easy) Scaloppine

 Easy Chicken Scaloppine
 
 
Elegant enough for company, and they won't miss the salt
 
4   boneless chicken breasts  
1/2 cup    flour  
1 cup    sliced fresh mushrooms  
1/4 tsp    black pepper  
1/4 cup    fresh lemon juice  
1 cup    unsalted chicken broth  
4 Tbs    olive oil  
 
1 Flatten each breast by pounding between plastic wrap with a mallet.
2 Dip each breast in flour to coat, and cook over medium heat in olive oil until brown on each side., about 5 minutes. Remove from heat.
3 Saute mushrooms in same pan for 4 minutes. Remove from heat, and keep warm along with the chicken.
4 Deglaze the pan over medium heat with the broth and the lemon juice. Cook until good gravy consistency. Add pepper.
5 Plate each chicken breast, topping each portion with 1/4 of the mushrooms. Pour 1/4 of the sauce over each serving.
