| 4 | | boneless chicken breasts | | | 1/2 cup | | flour | | | 1 cup | | sliced fresh mushrooms | | | 1/4 tsp | | black pepper | | | 1/4 cup | | fresh lemon juice | | | 1 cup | | unsalted chicken broth | | | 4 Tbs | | olive oil | | | |

| 1 | Flatten each breast by pounding between plastic wrap with a mallet. | | 2 | Dip each breast in flour to coat, and cook over medium heat in olive oil until brown on each side., about 5 minutes. Remove from heat. | | 3 | Saute mushrooms in same pan for 4 minutes. Remove from heat, and keep warm along with the chicken. | | 4 | Deglaze the pan over medium heat with the broth and the lemon juice. Cook until good gravy consistency. Add pepper. | | 5 | Plate each chicken breast, topping each portion with 1/4 of the mushrooms. Pour 1/4 of the sauce over each serving. | |
