Chinese Chicken Salad Recipe | Chinese Chicken Salad | | | | | | 2 | | boneless, skinless chicken breasts | | | 8 | | wonton dough squares | | | 2 oz | | rice noodles | | | 1/4 cup | | vegetable oil | | | 1/4 cup | | low sodium soy sauce | | | 1 tsp | | sesame oil | | | 1 tsp | | five spice powder | | | 1/2 cup | | green onion, sliced | | | 1/4 cup | | slivered almonds | | | 2 Tbs | | sesame seeds | | | 1 head | | iceberg lettuce | | | | | | | 1 | Preheat your oven to 375*. | | 2 | Wrap the whole chicken breasts in foil, and bake for 40 minutes. Cool. | | 3 | Meanwhile, cook the rice noodles in a small saucepan with the oil, over medium heat, watching that they do not burn. Cook in small batches, and drain on paper towels. | | 4 | Cut the wonton dough squares into 1/8" strips. Fry them in the same oil until lightly crisp. Remove from heat and cool on paper towels. | | 5 | Cut the chicken into bite-sized strips. | | 6 | In a mixing bowl, combine the soy sauce, sesame oil, and spice powder. Add the chicken and the onions and toss well to mix. Cover and chill in the refrigerator 1-8 hours (can be made to this point day before and refrigerated overnight) | | 7 | Just before serving, shred the lettuce and place in your serving bowl. Add the chicken mixture, rice noodles and the wontons. Toss lightly.
