Chinese Chicken Salad Recipe

The original easy chicken salad recipe called for frying the chicken, but here we bake it for a healthier Chicken Salad Recipe.

This Chinese Chicken Salad Recipe is higher in sodium than the majority of recipes on this low sodium recipes website, but it is still a very low sodium recipe.

Omitting the low sodium soy sauce is really not an option. The soy sauce gives this Chinese Chicken Salad it's very distinct flavor.
Chinese Chicken Salad Recipe

 Chinese Chicken Salad
 
 
2   boneless, skinless chicken breasts  
8   wonton dough squares  
2 oz    rice noodles  
1/4 cup    vegetable oil  
1/4 cup    low sodium soy sauce  
1 tsp    sesame oil  
1 tsp    five spice powder  
1/2 cup    green onion, sliced  
1/4 cup    slivered almonds  
2 Tbs    sesame seeds  
1 head    iceberg lettuce  
 
1 Preheat your oven to 375*.
2 Wrap the whole chicken breasts in foil, and bake for 40 minutes. Cool.
3 Meanwhile, cook the rice noodles in a small saucepan with the oil, over medium heat, watching that they do not burn. Cook in small batches, and drain on paper towels.
4 Cut the wonton dough squares into 1/8" strips. Fry them in the same oil until lightly crisp. Remove from heat and cool on paper towels.
5 Cut the chicken into bite-sized strips.
6 In a mixing bowl, combine the soy sauce, sesame oil, and spice powder. Add the chicken and the onions and toss well to mix. Cover and chill in the refrigerator 1-8 hours (can be made to this point day before and refrigerated overnight)
7 Just before serving, shred the lettuce and place in your serving bowl. Add the chicken mixture, rice noodles and the wontons. Toss lightly. Top with the almonds and sesame seeds.
