Unusually good Cornmeal Cookies

Crunchy Cornmeal Cookies

 Crunchy Cornmeal Cookies
 
 
1/3 cup    butter  
2/3 cup    brown sugar  
1/2 cup    granulated sugar  
1 tsp    baking powder  
1 tsp    ground nutmeg  
1   egg  
1 tsp    vanilla  
1/2 cup    corn meal  
1/4 cup    almonds  
1 1/3 cups    flour  
 
1 Preheat oven to 350*
2 Finely chop the almonds.
3 In a large bowl, beat the butter with the sugars until creamy. Add the baking powder and nutmeg. Mix well.
4 Beat in the egg and vanilla until combined. Add the cornmeal and the flour. Add the almonds and mix well.
5 Spray a baking sheet with non-stick spray. Shape the dough into 1" balls and place them on the prepared baking sheet.
6 Bake for 9 minutes, until lightly browned. Remove from oven and let cool on wire racks.
