Best Ever Cranberry Bread Recipe

Orange Cranberry Bread Recipe | Orange Cranberry Bread | | | | | | 2 cups | | flour | | | 1/2 tsp | | salt | | | 1/2 tsp | | baking soda | | | 1 cup | | sugar | | | 1 1/2 tsp | | baking powder | | | 3/4 cup | | fresh orange juice | | | 1 | | egg | | | 2 Tbs | | butter | | | 1 cup | | cranberries, fresh or frozen | | | 3/4 cup | | chopped walnuts | | | 2 Tbs | | orange zest | | | | | | | 1 | Preheat oven to 325*. | | 2 | Chop the cranberries and zest the orange with a fine grater or zester, making sure to zest only the orange part, not the white membrane (which is bitter). | | 3 | In a large bowl, mix together the flour, salt, baking soda, sugar and baking powder. Add the orange zest and the chopped cranberries. Mix in the chopped walnuts. | | 4 | Using a grater, grate the butter on the top, and then mix in. | | 5 | In a small bowl, beat the egg. Add the orange juice and stir to combine. Fold this into the dry mixture, mixing just enough to wet all ingredients. | | 6 | Spray a loaf pan with non-stick spray. Pour in the batter. | | 7 | Bake for 50-60 minutes, until a toothpick comes out clean when inserted into the center. | | 8 | Let cool in the pan, then place in a plastic bag.
