Best Ever Cranberry Bread Recipe

Orange Cranberry Bread Recipe

Orange Cranberry Bread
2 cups flour
1/2 tsp salt
1/2 tsp baking soda
1 cup sugar
1 1/2 tsp baking powder
3/4 cup fresh orange juice
1 egg
2 Tbs butter
1 cup cranberries, fresh or frozen
3/4 cup chopped walnuts
2 Tbs orange zest
1 Preheat oven to 325*.
2 Chop the cranberries and zest the orange with a fine grater or zester, making sure to zest only the orange part, not the white membrane (which is bitter).
3 In a large bowl, mix together the flour, salt, baking soda, sugar and baking powder. Add the orange zest and the chopped cranberries. Mix in the chopped walnuts.
4 Using a grater, grate the butter on the top, and then mix in.
5 In a small bowl, beat the egg. Add the orange juice and stir to combine. Fold this into the dry mixture, mixing just enough to wet all ingredients.
6 Spray a loaf pan with non-stick spray. Pour in the batter.
7 Bake for 50-60 minutes, until a toothpick comes out clean when inserted into the center.
8 Let cool in the pan, then place in a plastic bag. Let it rest for several hours, or overnight to meld the flavors before slicing.
