Berry Crockpot Cobbler


Berry Cobbler

 Berry Crockpot Cobbler
 
 
Use either fresh or frozen blueberries, or substitute your favorite berry here! Mix and match!
 
2 pints    blueberries  
1/2 cup    sugar  
2 Tbs    sugar (additional)  
1/2 cup    water  
2 Tbs    instant tapioca  
2 Cups    flour  
2 1/2 tsp    baking powder  
1/2 tsp    salt  
5 Tbs    butter  
1/2 cup    milk  
1   egg  
2 Tbs    brown sugar  
 
1 Into your slow cooker, place the berries, 1/2 cup sugar, water and tapioca. Cover and cook on low for 5-6 hours.
2 In a large bowl, combine the flour and the 2 TB sugar, baking powder and salt. Using a pastry blender or 2 knives scissor fashion, cut in the butter until the mixture resembles a coarse meal.
3 In a small bowl, mix the milk with the egg. Stir this into the flour mixture and combine to form a soft sough.
4 Turn the slow cooker heat up to high. Drop the dough by small amounts over the berries, covering all. Cover and cook about 45 minutes, until the topping is firm and a toothpick inserted in the center comes out clean. Sprinkle with the brown sugar.
5 Let stand for a few minutes before serving, then scoop into individual bowls.
