Easy and Delicious Crockpot Lasagna

Bow tie pasta is the favorite for this dish, although most any shape of pasta would be just fine here.
 
1 1/2 lbs    ground sausage  
1   chopped onion  
2   minced garlic  
28 oz    tomato puree  
15 oz    tomato sauce  
2 tsp    Italian seasoning  
1/4 tsp    black pepper  
1 lb    cooked pasta  
10 oz    frozen spinach  
15 oz    ricotta  
1/2 cup    grated parmesan cheese  
 
1 In a large skillet, cook the sausage along with the onion and garlic until the meat is no longer pink. Drain off any fat and pour meat and vegetables into the crockpot.
2 Add the tomato puree, tomato sauce and seasonings to the crockpot. Stir to break up any meat lumps. Cover and cook for 7-8 hours on low.
3 Cook the pasta and drain. Defrost the spinach. Place the spinach in a clean dish towel and squeeze all excess water from the spinach.
4 Stir the cheeses and the spinach into the crockpot. Gently stir in the cooked and drained pasta. Heat on high for 5 minutes and serve.

 Cooking Tips
Cooking the sausage and vegetable the night before is a real time saver, and take the spinach out of the freezer - let it defrost in the refrigerator over night.

In the morning, just assemble in the crockpot and let cook. When it's dinner time, cook the pasta as directed, drain and stir into the crockpot along with the spinach and cheeses. Easy!
