Crockpot Potatos Euphoria

 Potatos Euphoria
 
 
An incredible cross of all your favorite potato tastes .. a little like scalloped, a little like baked, a little like mashed, just plain yummy!!!
 
4   scallions  
2   garlic cloves  
1 tsp    salt  
1/4 tsp    pepper  
2 lbs    potatoes  
8 oz    cream cheese  
 
1 Wash the scallions and finely chop. Mince the garlic. Peel and slice the potatos into 1/8" thick slices. Cut the cream cheese into 1" cubes. Reserve all.
2 In a small bowl, combine the scallions and the garlic.
3 Spray your slow cooker with non-stick spray. Layer one fourth of the potatos in the crockpot. Sprinkle with some of the salt and pepper, then top with one third of the cream cheese and one third of the scallion mixture. Add a second layer of the potatos and repeat the other layers on top. Top with the last of the potatos.
4 Cover and cook on high for 2 hours. Stir to distribute cheese well. Cover again and cook for 1-2 hours more.
5 When potatos are well tender, mash slightly and serve.
