Heavenly Crockpot Yams


Yam and Pineapple Pudding

 Crockpot Yams and Pineapple Pudding
 
 
A melt-in your mouth treat!
 
3 lbs    yams  
16 oz    canned crushed pineapple  
12 oz    evaporated milk  
1 1/4 cups    brown sugar  
6 Tbs    butter  
3   eggs  
1 tsp    cinnamon  
1/2 tsp    nutmeg  
 
1 Peel and shred the yams. Beat the eggs in a small bowl.
2 Spray your slowcooker with non-stick spray. Into the cooker, combine the yams, pineapple with it's juice, evaporated milk, sugar, spices and eggs.
3 Cover and cook on low for 7-8 hours. Stir every 1 1/2 hours. This may seem curdled at first, but it will become creamy and come together with stirring.
