Easy Chicken Salad Recipe

A uniquely different easy chicken salad recipe infused with fresh fruit, and warm baked chicken.

Take advantage of the fresh, seasonal produce and change up the black berries with what is readily available. Most any soft fruit will substitute nicely in this hot chicken salad recipe.

This baked chicken breast recipe cooks up really fast, there are really only three basic steps to this recipe.



Baking the chicken breast is the healthiest method for cooking poultry, and while it is baking in the oven, the fruit can be prepared and ready to toss together when the chicken breast is finished baking.

Using fresh herbs enhances all the flavors of this recipe, it is better to substitute another herb that you have on hand rather than use dried herbs. Dried herbs just do not lend the same flavor kick that fresh herbs add to this chicken salad.

Easy Chicken Salad Recipe
4 boneless, skinless chicken breasts
1 cup minced shallots
½ cup lemon juice
2 tbs chopped fresh thyme
2 tbs chopped parsley
¼ tsp pepper
8 slices fresh French bread (Try this low salt French Bread Recipe)
4 tbs sugar
1 cup blackberries
2 fresh peaches, diced
3 roma tomatoes, diced
4 tbs red onion, diced
½ cup fresh basil, slivered
3 tbs olive oil
4 tbs balsamic vinegar
¼ tsp pepper
one small head, or one bag butter lettuce, or mixed baby lettuces
1 To prepare the chicken:
2 In a zip-type plastic bag, combine shallots, lemon juice, parsley, thyme, and pepper. Zip bag and mix well by shaking. Add chicken and refrigerate 30 minutes to 3 hours.
3 After marinating, pre-heat oven to 375°
4 Cut the bread into ½ inch cubes. Toast the bread in the oven on a cookie sheet for 4 minutes. Remove from oven, and reserve.
5 Place the chicken in a baking dish and cook 18-20 minutes.
6 While the chicken cooks, Heat a large skillet over medium heat. Add the peaches, blackberries and 1 TB sugar. Cook 2-3 minutes,until the fruit is lightly browned., stirring frequently.
7 Combine the fruit mixture, tomatoes, basil, and onion in a large bowl.
8 Whisk together the vinegar, remaining sugar,olive oil, and pepper. Add this mixture to the fruit mixture and toss gently to combine. Let rest until the chicken is finished baking.
9 When done, remove the chicken from the oven and slice.
10 Toss the bread cubes with the fruit mixture.
11 Make a bed of lettuce on each plate, then place each sliced chicken breast onto of the lettuce on the plate, and top with ¼ bread and fruit mixture. Repeat for each serving.
