Seafood Recipe Tips

When you shop for fish, make sure you are getting the very freshest by checking these points:

  • If whole - the eyes must be bright and clear.
  • The scales should be bright and shiny as well as tight to the skin.
  • The flesh should be firm and should spring back when presses lightly.
  • And there definitely should not be a strong "fishy" order.

The seafood recipes contained here are simplified, taking the guess work out of your kitchen, and putting a variety of scrumptious delicacies on your table.


The standard theory for cooking fish is that it should be measured at it's thickest point, at it's depth, not across. And it should be cooked for 10 minutes per inch, no matter what method of cookery you use.

This applies to fillets, whole fish and steaks. When baking, follow directions on the easy fish recipes, or use the standard 450* oven for baking.

Measure your fish at it's thickest point by placing it on it's side, not erect, and plan on 10 minutes per inch, 5 minutes per side per inch.

Remember that fish is one of the more delicate foods, and it is easily overcooked. It is better t remove it from the heat too early, as it will continue to cook off heat until completely cooled, than to serve a meal that is dry, tasteless and overcooked.
