Take advantage of your local farmer's markets when the produce is plentiful, typically in the spring and summer.

Frozen peas can be used, but you will loose the real "fresh" taste that only fresh peas will lend this cold soup recipe.

Cabbage Soup diet Recipes

 Cream of Fresh Pea Soup
 
 
1 head    Bibb lettuce  
3   scallions  
2 cups    fresh peas, shelled  
1   potato, peeled and cubed  
3 cups    low sodium chicken stock  
1 cup    heavy cream  
1/4 tsp    ground nutmeg  
1/4 tsp    freshly ground black pepper  
2 tbs    lemon juice  
 
1 Process the lettuce with the metal blade of a food processor, until coarsely chopped. Reserve. Coarsely chop the scallions in the food processor.
2 Cut the peeled potato into cubes.
3 Simmer the lettuce, scallions, peas and potato with 2 cups of the broth, covered, until the potato is tender, about 15 minutes. Remove from the heat. Strain the liquid and return it to the sauce pan.
4 Puree the vegetables in the food processor, with the metal blade, until smooth.
5 Whisk the puree and the remaining ingredients into the liquid in the sauce pan and simmer for 5 minutes.
6 Refrigerate, covered, until well chilled, about 4 hours. Serve cold.
