Green Bean Salad Recipe

"I made this green bean salad recipe yesterday, and it was SIMPLY DELICIOUS!"



Use fresh, tender green beans for this easy salad recipe. You can fix this simple vegetarian recipe in just a few minutes!

Tossing in the fresh tomatoes adds a delightful color and you will find that your guests will ask for seconds and thirds.

Only 33mg of sodium per serving! Besides delicious, this is one of the healthiest salads you could serve.

Green Bean Salad

 Green Beans and Tomato Salad
 
 
1 lb    green beans  
1/4 cup    fresh basil, finely chopped  
2 Tbs    shallots, minced  
2 Tbs    lemon juice  
2 Tbs    sour cream  
1 Tbs    honey  
1 pint    grape tomatoes (or cherry tomatoes)  
1/4 cup    pine nuts  
 
1 Trim the beans and cut into 1" pieces. Steam in a double boiler for five minutes over medium high heat. Remove from heat and rinse with cold water. Drain
2 Combine basil with next four ingredients (through honey) and mix well.
3 Halve the tomatoes and combine with the beans. Toss with the basil mixture and top with the nuts.
