Green Beans with Roasted Onion

Green Beans are one of my favorite vegetables to make. They are easily found most any time of year, and they add a nice color to most any meal.

I like to roast the onion the day before, so that it is ready to pull together when the vegetables are finished steaming.

Another good idea is to roast a few cloves of garlic along with the onion. Simply drizzle oil on the garlic and add the cloves (peeled) to the foil packet before you place it in the oven.

This is a good dish to take to pot lucks, because this vegetarian recipe is easily doubled and tripled.



Experiment by adding sun dried tomatoes, or maybe some crumbled feta cheese. This simple recipe is one of the easiest vegetarian recipes.




Garden Bean recipe with Roasted Onion

 Green Bean Recipe with Roasted Onion
 
 
1 lb    green beans  
1/2   red onion  
4 Tbs    olive oil  
1/4 tsp    freshly ground black pepper  
6 sprigs    fresh thyme  
3 Tbs    lemon juice  
1/4 cup    pine nuts  
 
1 Preheat oven to 400*
2 Trim the beans, and cut into bite-sized pieces. Steam in double boiler until just tender, about five minutes. Remove from heat and rinse with cold water to stop the cooking. Refrigerate, covered, until the onion is finished roasting.
3 Cut a piece of foil large enough to wrap the onion half inside. Place the onion on top of the foil, drizzle with 1TB of the olive oil and add 2 sprigs of the thyme on top. Wrap in the foil, and bake for 1 hour. Remove from the oven, and allow to cool. Remove and discard the thyme. Chop the onion roughly.
4 Mix the rest of the olive oil with the lemon juice and add the leaves from the thyme sprigs.
5 Mix the onions with the green beans, and toss with the oil mixture.
6 Top with the pine nuts.
