Mexican Green Chili


Green Chili

 Green Mexican Chili
 
 
4   Onions  
2   cloves of garlic  
1/4 cup    vegetable oil  
4   large green bell peppers, halved and seeded  
2   7 oz cans of whole green chilies  
1 Tbs    dried oregano  
2   13 oz cans of tomatillos  
6 cups    chicken broth  
4   fresh jalapeņos, stemmed, seeded and chopped fine  
1/2 cup    chopped fresh cilantro  
2 cups    grated jalapeņo jack cheese  
 
1 In a 6-8 qt pan combine the onions, garlic and oil. Cook over medium heat, stirring often until soft and golden.
2 Slice the bell peppers and chilies crosswise.
3 Add the oregano, tomatillos and their liquid, broth, bell peppers, chilies and jalapenos to the pan. Bring to a boil, reduce heat and simmer for 15 minutes. Stir in the cilantro.
4 Ladle the chili into individual bowls and sprinkle with the grated cheese.
