Grilled Corn

Grilled Corn

Our Favorite Corn
6 ears of corn
1/4 cup butter, softened
1 cup sour cream
6 oz grated or crumbled cotija cheese or parmesan cheese
1 Gently peel back corn husks, but do not tear off. Pull out and discard silk.
2 Cut six rectangles of foil large enough to accommodate an ear of corn each.
3 Rub butter over each ear of corn. Season, if desired, with salt and pepper. Pull husks back over the ears and wrap each ear in the foil squares.
4 Place wrapped ears of corn on hot grill, or under broiler. Cook, turning 2 or 3 times with tongs, for about 20 minutes.
5 Remove corn from heat and carefully peel off the foil and the husks. Spread each corn with the sour cream and sprinkle with the cheese.
