Grilled Corn
Grilled Corn | Our Favorite Corn | | | | | | 6 | | ears of corn | | | 1/4 cup | | butter, softened | | | 1 cup | | sour cream | | | 6 oz | | grated or crumbled cotija cheese or parmesan cheese | | | | | | | 1 | Gently peel back corn husks, but do not tear off. Pull out and discard silk. | | 2 | Cut six rectangles of foil large enough to accommodate an ear of corn each. | | 3 | Rub butter over each ear of corn. Season, if desired, with salt and pepper. Pull husks back over the ears and wrap each ear in the foil squares. | | 4 | Place wrapped ears of corn on hot grill, or under broiler. Cook, turning 2 or 3 times with tongs, for about 20 minutes. | | 5 | Remove corn from heat and carefully peel off the foil and the husks.
