Grilled Corn Recipe

Who doesn't love a fresh grilled corn recipe? This vegetarian recipe is so easy to make.
I don't always use the grill for this corn recipe. I sometimes heat up the broiler and make this recipe just as is.

Although it is very low sodium, it isn't low fat. But that is easily fixed by eliminating the sour cream, or even choosing low fat sour cream for this dish.

To make this easy vegetarian recipe in advance, simply prepare the corn with the foil and refrigerate until you are ready to grill.

Grilled Corn

Our Favorite Corn Recipe
6 ears of corn
1/4 cup unsalted butter, softened
1 cup sour cream
6 oz grated or crumbled cotija cheese or parmesan cheese
1 Gently peel back corn husks, but do not tear off. Pull out and discard silk.
2 Cut six rectangles of foil large enough to accommodate an ear of corn each.
3 Rub butter over each ear of corn. Season, if desired, with salt and pepper. Pull husks back over the ears and wrap each ear in the foil squares.
4 Place wrapped ears of corn on hot grill, or under broiler. Cook, turning 2 or 3 times with tongs, for about 20 minutes.
5 Remove corn from heat and carefully peel off the foil and the husks. Spread each corn with the sour cream and sprinkle with the cheese.
