Italian Pasta Recipes

Italian Pasta Recipes are traditionally made from semolina four, which is the very core of durum wheat. This core of the wheat berry produces a very hard flour when it is milled. When you buy packaged pasta in the store, in most cases, you are buying a product made from semolina flour. In northern Italy, the Italian cooking recipes from that region use whole eggs that are added to the dough recipe, creating a richer, lighter dough. In Southern Italy, only the flour and the water are mixed for the noodle dough. Yet in other parts of Italy, only the whites of eggs are added to the flour and the water. |
However pasta is made, it is loved the world over because of it's versatility. Of course, taking the time to fix an authentic Italian pasta recipe is the best, but commercial packages are of very high quality, and have a long shelf-life. If you want to try your hand at home-made noodles, take note here and mix the semolina flour 50-50 with all purpose flour. Alone it will not absorb the liquid as well as a combination of flours.
