Lamb Pita Pocket Sandwiches

These Lamb Pita Pocket Sandwiches are fun to take on a picnic, or serve for a casual meal.

A fun substitute for cucumbers is grapes that have been sliced in half. The add the same "crunch" but lend a slightly sweet flavor to your finished pita sandwich.

The secret to successful meatball rolling is to keep your hands moist. This way the lamb will not stick to your palms.

Serve these pitas with a side of fresh fruit.

Adding a bit of minced mint will enhance the flavor of the lamb, just a few teaspoons will give it that mint zip taste.
Lamb Pita Pockets

Lamb Pockets
2 small zucchinis
12 oz ground lamb
4 Tbs minced red onions
1 Tbs dried oregano
1/4 tsp freshly ground black pepper
2 cloves of garlic, minced
1/2 cup plain yogurt, Greek type is best
1/2 tsp sugar
4 Tbs chopped cucumbers
4 pita bread
1 Wash and slice the zucchinis into thin slices. Reserve.
2 In a bowl, combine the lamb, 3 tablespoons of the minced onions, oregano and garlic. Mix lightly.
3 With slightly wet hands, form the lamb mixture into small "meatballs".
4 In a large skillet over medium heat, heat oil and add the lamb balls. Cook for a few minutes until well browned on all sides. Cover, turn heat to low and cook for 10 minutes.
5 While the lamb is steaming, combine the yogurt, remaining onion, cucumber and sugar in a bowl. This will be your dressing.
6 Remove cover and add the zucchini. Increase heat to medium and cook for 3 minutes, until zucchini is tender. Remove from heat.
7 Cut an opening in each pita bread, and coat insides with the dressing. Stuff the lamb and squash mixture inside and serve.
