Lemon Raspberry Crockpot Dessert

This crockpot dessert can cook as you serve dinner. If you put it together just before you begin dinner, it will be ready when you are.

Take advantage of fresh raspberries when they are in season and plentiful.

You will find this is creamy like a pudding cake, and the lemon and raspberry flavors are a nice compliment to each other.

Lemon-Raspberry Pudding Cake

1/2 pint    raspberries  
1/2 cup    sugar  
3 Tbs    flour  
1 cup    milk  
2   eggs  
  grated zest of one lemon  
3 Tbs    lemon juice  
3 Tbs    butter  
3 Tbs    powdered sugar  
 
1 Spray a 1 1/2 qt soufflé dish with non-stick spray. Spread the raspberries over the bottom of this dish.
2 Separate the eggs, whites from yolks. Melt the butter and reserve.
3 In a medium bowl, whisk the sugar and the flour to combine. Add the milk, egg yolks, zest and juice. Stir well. Add the melted butter and whisk until combines.
4 With an electric beater, whip the egg whites to form stiff peaks. Fold the whites into the lemon mixture gently. Pour all over the berries.
5 Place a meat rack, or collapsible steamer basket in the bottom of a slow cooker. Place the dessert dish ontop of this and add enough water to come up 1" on the sides of the dish.
6 Cover the slow cooker and cook on high for 2 hours, until the top springs back when gently pressed.
7 Sift the powdered sugar over the top and serve warm.
