Low Salt Chili Con Carne

Take this popular chili recipe to new healthier heights with this delicious low salt recipe.

You will love how easy this chili recipe is to make.

Sometimes I make a double batch and freeze half for rainy days. Having good, healthy meals in the freezer saves me time and money.

A good way to serve up this low salt chili con carne recipe is to use baked potato halves for serving bowls. This way you get the additional benefits of all the good minerals in the potatoes, too.

Another idea is to use small sourdough bread bowls for serving up your chili. Note that the bread will add additional sodium to the meal, but since this chili is so low in salt, it may just fit your own personal diet guidelines.

Frontier makes a no-salt chili powder that is excellent! I find it on my grocer's shelf along with the regular jarred seasonings
 
1 Tbs    vegetable oil  
1   onion, chopped  
1   red pepper, seeded and chopped  
1 lb    ground beef  
2   garlic cloves, minced  
3 Tbs    low-salt chili powder (see notes)  
1 tsp    cumin  
2 tsp    oregano  
1/2 tsp    black pepper  
4 cups    canned or fresh no-salt-added tomatoes  
1 Tbs    balsamic vinegar  
1/4 tsp    crushed red pepper  
 
1 Heat the oil in a large, deep skillet. Add the onions and pepper. Cook for 4-5 minutes, until the vegetables are soft.
2 Add the meat, stirring well to break up the lumps.
3 Add the garlic and seasonings. Stir well and cook for 2 minutes over medium heat.
4 Add the tomatoes, vinegar and pepper flakes. Bring to a boil, reduce heat and continue to cook for one hour. Stir occasionally.
