Low Salt Halibut With Orange Sauce


Low Salt Halibut with Orange Sauce

Halibut with Orange Sauce
2 lbs halibut
2 cups water
3 Tbs lemon juice (reserve 1 TB)
1 Tbs sugar
1/4 tsp pepper
1/2 cup orange juice
2 Tbs cornstarch
1/2 cup water
2 tsp orange zest
11 oz mandarin oranges
1 Place fish in a well oiled skillet. Add 2 cups water and bring to a low boil. Add 2 TB of the lemon juice and the pepper.

2 Cover and cook for 5 minutes, or until the fish begins to flake.
To Prepare the Sauce
1 While the fish is cooking, prepare the sauce that will go on top of the fish. Combine cornstarch with with sugar in a small saucepan. Stir in the orange juice and remaining 1/2 cup water. Whisk well to remove any cornstarch lumps.
2 Cook sauce slowly over low heat, until thickened. Stir in the zest remaining lemon juice and the oranges.
3 When fish is done, place on platter and top with sauce. Or use individual plates.
