Low Salt Halibut With Orange Sauce
Low Salt Halibut with Orange Sauce | Halibut with Orange Sauce | | | | | | 2 lbs | | halibut | | | 2 cups | | water | | | 3 Tbs | | lemon juice (reserve 1 TB) | | | 1 Tbs | | sugar | | | 1/4 tsp | | pepper | | | 1/2 cup | | orange juice | | | 2 Tbs | | cornstarch | | | 1/2 cup | | water | | | 2 tsp | | orange zest | | | 11 oz | | mandarin oranges | | | | | | | 1 | Place fish in a well oiled skillet. Add 2 cups water and bring to a low boil. Add 2 TB of the lemon juice and the pepper. | | 2 | Cover and cook for 5 minutes, or until the fish begins to flake. | | To Prepare the Sauce | | 1 | While the fish is cooking, prepare the sauce that will go on top of the fish. Combine cornstarch with with sugar in a small saucepan. Stir in the orange juice and remaining 1/2 cup water. Whisk well to remove any cornstarch lumps. | | 2 | Cook sauce slowly over low heat, until thickened. Stir in the zest remaining lemon juice and the oranges. | | 3 | When fish is done, place on platter and top with sauce.
