Macaroni with Tomatoes, a Traditional Favorite


Macaroni with Tomatoes

 Macaroni with Tomatoes
 
 
1/4 cup    olive oil  
1   onion  
2 cloves    garlic  
2 lbs    fresh roma tomatoes  
1 lb    macaroni  
1 1/2 cups    parmesan cheese  
 
1 Chop and crush the tomatoes, reserve.
2 Chop the onion finely, and saute in the olive oil over medium heat for 2 minutes. Add the garlic, and cook one more minute. Add the tomatoes and cook about 30 minutes.
3 Meanwhile, cook the macaroni in boiling water for 8 minutes, drain and reserve.
4 Grate the cheese and reserve.
5 Plate the pasta and ladle the sauce over each serving. Top each plate with a portion of the grated cheese.
