Easy, Classic Mashed Potato Recipe

Mashed Potato Recipe

 Classic Mashed Potatoes
 
 
4   large russet potatoes  
1/2 tsp    salt  
1 cup    half and half cream  
6 Tbs    butter  
 
1 Preheat your oven to 450*
2 Pierce the whole potatoes with a fork and bake until tender, approximately 45 minutes. Remove from oven and let cool enough to peel.
3 Peel the potatoes, an place in a large bowl.
4 Melt the butter and heat the milk in a microwave oven, or over low heat in a small saucepan. Add the salt and stir.
5 Pour the liquid over the potatoes and, using an electric beater, cream the potatoes until desired consistency.
6 Scoop the potatoes into your serving bowl.

By baking the potatoes, instead of boiling them, you preserve much of the nutrients and more of the good flavor of the potatoes.
For the Holidays, use miniature pumpkins as "serving bowls" for the potatoes, or one large squash. To prepare the pumpkins or squash for using as a bowl, bake in a 350* oven until tender (about 45 minutes). Remove, let cool, and scoop out the insides. Stuff with your potatoes!
