Tender Minted Lamb Chops

Baking lamb chops is an excellent way to bring out the fresh flavor of your meat.

This lamb chop recipe is simple to fix, and takes only a few minutes of baking time at a very high temperature, then allowing the meat to sit undisturbed in the oven.

Your lamb chop recipe should not be overcooked, a nice medium rare is what you are striving for here.

Minted Lamb Chops

 Minted Lamb Chops
 
 
4   loin lamb chops (5oz each)  
1   lemon  
1/2 tsp    onion powder  
1/4 cup    unsalted mayonnaise (see recipe)  
1/2   low-sodium breadcrumbs  
2 Tbs    sugar  
1 cup    fresh mint, chopped  
 
1 Preheat oven to 500*
2 Cut the lemon in half.
3 Place the chops in a shallow baking dish. Rub both sides of chops with a cut side of the lemon, then sprinkle with onion powder.
4 In a small bowl combine the mayonnaise, bread crumbs, sugar and mint. Cover each chop with a portion of this mint mixture. Squeeze the lemon halves oven the chops and let the juice run into the baking dish. Place the lemon halves beside the chops and bake for 4 minutes ONLY.
5 Turn off the heat, and let the lamb continue to sit in the oven for 30 minutes without opening the oven door.
6 After this time, they should be perfectly done and ready to serve.
