Moist Banana Bread Recipe

This Moist Banana Bread Recipe uses brown sugar to retain it's moistness for several days.

Simple ingredients (which you probably already have on hand), and a just a few minutes of preparation you can easily use up those last few over-ripe bananas and feel really thrifty.

This quick bread recipe is just PERFECT for a lunch box treat or a between meals healthy snack. Pack a slice or two in your briefcase for that mid-morning pick-me-up.

3/4 cup    buttermilk  
1 cup    brown sugar (packed)  
1/2 cup    unsalted butter  
3   bananas  
2   eggs  
1 tsp    vanilla  
1/2 tsp    baking soda  
1 2/3 cups    flour  
1 cup    walnuts  
 
1 Pre heat your oven to 325*
2 In a medium saucepan, heat the buttermilk with the brown sugar over low heat. Cook and stir until dissolved. Add the butter and stir until melted. Remove from heat and let cool to room temperature.
3 Mash the bananas with a fork until well mashed.
4 Lightly beat the eggs, then add them to the bananas. Stir this mixture into the buttermilk and brown sugar mixture, and add the vanilla. Set aside.
5 In a large mixing bowl, combine the baking soda with the flour. Stir in the nuts.
6 Add the wet ingredients to the dry ingredients and stir well. Pour all into a loaf pan that has been well oiled.
7 Bake in the center of your oven for approximately one hour, until golden brown and a tooth pick comes out clean when inserted into the center. Let cool for five minutes in the pan, then cool completely on a wire rack.
