Marvelous Mushroom Appetizer

Mushrooms are rich with selenium, which is a mineral that works as an antioxidant to protect body cells from damage that might lead to heart disease, some cancers and other diseases of aging.

Selenium is important to your immune system and fertility in men. Mushrooms are among the richest sources of selenium in the produce aisle.

This is good news for vegetarians, whose sources of selenium are limited.

This easy to make hot appetizer recipe makes a pretty presentation on your platter, and is usually the most popular appetizer at any gathering.

Marsha's Mushroom Appetizer Rolls

 Marsha's Mushroom Rolls
 
 

1 lb    mushrooms (chopped fine)  
1/4 cup    unsalted butter  
1   small onion, minced  
1/4 cup    diced red pepper  
6 Tbs    flour  
2 tsp    fresh or dried basil  
1/4 tsp    black pepper  
2 cups    light cream  
2 tsp    lemon juice  
1/2   loaf sliced white bread (crusts trimmed), about 8 slices  
4 Tbs    melted unsalted butter  
 
1 Saute mushrooms, onions and diced red pepper in butter five minutes. Cool slightly. Blend in the flour, basil and pepper to mix well. Slowly stir in the cream. Cook, stirring constantly until quite thick. Add lemon juice and cool.
2 With rolling pin, roll bread slices until they are as thin as pastry. Spread 1 tablespoon of filling on each slice (enough to cover). Roll up bread to form a long roll. Space on cookie sheet, seam side down.
3 Refrigerate a few hours or until firm. Cut each roll into 1/2", and place slices back on the cookie sheet, cut side up. Brush each pinwheel slice with some of the melted butter.
4 Bake at 400 degrees for 10 - 15 minutes, or until nicely browned on top.
