Fun Noodle Stuffing


Noodles Stuffing

 Noodle Stuffing
 
 
2 lbs    noodles  
1/2 cup    butter  
1   onion, finely chopped  
1 lb    mushrooms, sliced  
3   celery ribs  
1 cup    chicken broth  
  salt and pepper to taste  
 
1 Cook the noodles in two pots with plenty of water, about four minutes if thin or homemade, about 10 minutes if using packaged noodles.
2 Meanwhile, melt the butter in a large skillet. Add the onion and mushrooms. Cook over medium heat for 3-4 minutes.
3 Drain the noodles and combine with the cooked vegetables in a large mixing bowl,
4 Cut the celery into a fine dice and add it to the noodle mixture. Add the broth. Salt and pepper to taste.
5 Cool to room temperature before stuffing a turkey.
This may also be served as a side dish as follows:
1 Put the noodle mixture into a casserole, add one more cup of broth and 1/2 cup of cream.
2 Dot with butter and bake in a preheated oven (375*) for 20 minutes. Increase the cooking time by 10-15 minutes if the noodle stuffing had been chilled.
