Hearty Onion Soup Recipe For Everyday Meals

"Of all the onion soup recipes, this French onion soup with floating toast and melted cheese is simply outstanding!"



It may seem like a lot of onions when you begin to slice them up, but the onions will cook down quite a bit.

You can substitute swiss cheese for the gruyere cheese, and if you don't over sprinkle (smile) you can easily keep this a low sodium recipe.

Try a combo of both red onions and brown onions if that is what you have on hand. We like the red onion recipe because most often red onions have a sharper flavor.

I use a simple mandoline to slice up the onions. The prep work goes really fast with a mandoline, but a food processor would be even faster.

Hint: To avoid "onion eyes" strap on a pair of swimming goggles to keep out the pungent aroma that many onions give off.

1 lb    red onions  
1 1/2 oz    unsalted butter  
10 oz    cider  
2 tsp    flour  
25 oz    unsalted vegetable broth Click Here for Vegetable Broth Recipe  
8 slices    French bread  
2 1/2 oz    cream  
1 oz    gruyere cheese, grated  
 
1 Peel the onions and finely slice. In a saute pan, melt 1 oz of the butter and saute the onion until pale. Add 10 oz of the cider and simmer for 5 minutes. Reserve.
2 Melt the remaining butter in the saute pan and add the flour to make a roux. Cook one minute, stirring with a whisk constantly.. Do not let brown. Add the broth and bring to a boil. Sir and cook for 15 minutes.
3 Pre-heat the broiler.
4 Stir the onions into the soup and simmer for 15 minutes, stirring often. Meanwhile lightly toast the bread under the broiler.
5 Stir in the remaining cider and the cream. Heat.
To serve: Divide the soup among four good sized bowls. Top with the toast and sprinkle with the cheese.
