Hearty Onion Soup Recipe For Everyday Meals

| It may seem like a lot of onions when you begin to slice them up, but the onions will cook down quite a bit. You can substitute swiss cheese for the gruyere cheese, and if you don't over sprinkle (smile) you can easily keep this a low sodium recipe. |
Try a combo of both red onions and brown onions if that is what you have on hand. We like the red onion recipe because most often red onions have a sharper flavor.I use a simple mandoline to slice up the onions. The prep work goes really fast with a mandoline, but a food processor would be even faster. Hint: To avoid "onion eyes" strap on a pair of swimming goggles to keep out the pungent aroma that many onions give off.
