Fresh Tomato Recipe with Grilled Onion and Basil

This tomato recipe is by far one of the most versatile side dish recipes around.

When in season, tomatoes are a flavorful way to get many of your daily vitamin requirements.

To make this in advance simply grill the onions the day before you plan to serve this salad recipe. Actually, the onions can be either roasted or sauteed just as well.

A new twist on this recipe is to add other vegetables that you may have on hand, or fresh from your garden. Broccoli works very well with this dish, as does fresh or frozen corn kernels, which add a new dimension to this healthy side dish recipe.

Hint: If you want to add fresh corn, it is easy to grill the corn, wrapped in foil, as you grill the onions.

Grilled Onion & Fresh Tomato Recipe

 Grilled Onion & Tomato Side Dish Recipe
 
 
3   red onions  
3 Tbs    olive oil  
3   tomatoes, small  
10   large basil leaves  
2 tbs    balsamic vinegar  
 
1 Preheat grill or broiler to medium high.
2 Slice the onions into 1/3" thick slices. Place toothpicks on either side of each onion round to assist you in turning them on the grill. Baste with 1 TB of the oil.
3 Core and cut the tomatoes into wedges.
4 Place the onions on the grill and cook until each side is lightly charred, turning halfway through grilling or broiling.
5 Remove the onions and seperate the rings. Cut into bite-size sections. Chop the basil.
6 Place the onions, basil and the tomatoes into a serving bowl. Salt and pepper to taste and toss with the balsamic vinegar and remaining oil.
