Pesto Pizza

One of the easiest pizza recipes is this Pesto Pizza. It's really easy to change it up some by adding some cut up fresh vegetables, anything you may have on hand.

You may buy your pizza dough from your local pizzeria, or often you may find pizza dough in the refrigerated section of the market. Best yet is to make your own, very easy with the help of your breadmaker. See my recipe for Perfect Pizza Crust in the bread section.

1 recipe    perfect pizza crust  
3/4 cup    pesto  
2-3   roma tomatoes, sliced thin  
1 cup    button mushrooms, sliced  
1   fresh zucchini  
8oz   mozzarella cheese, low fat  
 
1 Pre-heat your oven to 450* for a minimum of 45 minutes.
2 On a well floured surface, roll out your dough into a nice, evenly smooth 12" circle, being careful not to tear the dough.
3 Spray a baking sheet with non-stick spray, or use your pizza stone (which has pre-heated along with your oven.) Place the dough circle on the pan, and bake in the oven for 4-5 minutes, until it begins to brown. Remove from oven.
4 Spread the pesto from edge to edge. Evenly toss on 3/4 of the cheese, and next layer on the vegetables. Top with remaining cheese.
5 Return your pizza to the oven and continue to bake for an additional 10 minutes, or until the cheese is bubbly and the vegetables begin to brown.
