Take measures to ensure your meat is done.. Certain bacteria, including trichinae, lurk in undercooked pork. Be certain that your meat reaches an internal temperature of at least 160℉

The best way to be sure your pork roast recipes are completely cooked through is to remove it from your oven when your meat thermometer reaches between 160℉ and 170℉, and let it stand for 15 minutes at room temperature before serving.

This way, your roast will continue to cook for those few minutes as it is cooling down, and you will find that it is easier to slice and to serve.
