Slice the pork into 1/4" slices. |

In a large skillet, heat the oil over medium heat. Add the pork, garlic, onion and the salt and pepper. Cook, stirring often for 5 minutes, or until the vegetables are limp and the pork is lightly browned. Reserve. |

Into the same skillet, add the potatoes and carrots. Cook over medium heat for 5-7 minutes, until the potatoes are browned. Stir in the maple syrup. |

Return the pork and vegetables to the pan. Cover, add the green beans and continue to cook until heated through. |
