Pork Tenderloin
with Maple Syrup Glaze



Maple-glazed Pork tenderloin

 Maple-glazed Pork tenderloin
 
 
1 Tbs    olive oil  
1 clove    garlic, minced  
1/4 tsp    salt  
1/4 tsp    pepper  
1 lb    pork tenderloin  
1   onion, sliced  
3 cups    cooked red potatoes, quartered  
2   carrots, sliced  
1/4 cup    pure maple syrup  
10 oz    green beans (frozen package)  
 
1 Slice the pork into 1/4" slices.
2 In a large skillet, heat the oil over medium heat. Add the pork, garlic, onion and the salt and pepper. Cook, stirring often for 5 minutes, or until the vegetables are limp and the pork is lightly browned. Reserve.
3 Into the same skillet, add the potatoes and carrots. Cook over medium heat for 5-7 minutes, until the potatoes are browned. Stir in the maple syrup.
4 Return the pork and vegetables to the pan. Cover, add the green beans and continue to cook until heated through.
