Pumpkin Bar Cookies

Leslie Mitman's Pumpkin Bar Cookies

Leslie Mitman's Pumpkin Bar Cookies
4 eggs
1 2/3 cups sugar
1 cup vegetable oil
16 oz canned pumpkin
2 cups flour
2 tsp baking powder
2 tsp cinnamon
1 tsp salt
1 tsp baking soda
For The Icing
1 cup butter
8 oz cream cheese
2 tsp vanilla
16 oz powdered sugar
1 cup chopped walnuts
1 Preheat oven to 350*
2 Stir together the flour, baking powder, baking soda, salt and spices. Reserve. together.
3 With an electric mixer on high, beat the eggs and sugars in a large bowl until light and fluffy. Add the eggs and the oil. Add the pumpkin and mix well. Add the dry ingredients and mix well.
4 Pour into a 15 x 10 jelly roll sized pan, ungreased. Bake 25-30 minutes, until a toothpick comes out clean when poked into the center.
5 With an electric mixer, beat all the icing ingredients together, reserving the nuts. Spread over the baked pumpkin bars and top with the nuts.
