Quick Tomato Sauce with Big Taste

We all need a quick tomato sauce every now and then. It is preferable to the canned or jar varieties of marinara or pasta sauce. The best part is you know the ingredients, so there is no guessing at the nutritional content.

This tomato sauce cooks up quick as you boil the pasta.

Be certain to use no-salt added tomato sauce, so that the sodium content remains low.

You can easily add some fresh vegetables, such as grated carrots or beets ...

Or try some chopped or sliced mushrooms for added potassium and great flavor.

If you keep the basics in your pantry, this sauce can be put together in no time, and it will rival any "canned" sauce from the supermarket.
 

1   onions  
2 cloves    garlic  
4 tbs    olive oil  
1 28 oz    can plum tomatoes  
1 6 oz    can tomato paste  
1/4 tsp    pepper  
2 tbs    balsamic vinegar  
1 tsp    dried basil  
1 tsp    dried oregano  
1 tsp    brown sugar  
 
1 Chop the onion as fine as you desire. Mince the garlic, and set aside.
2 In a large skillet, heat the oil over medium heat. Add the onion and cook 2-3 minutes, until translucent. Add the garlic, and cook 1 minute longer. Do not let the garlic brown. Add the tomato paste and stir to incorporate the oil. Add the remaining ingredients and bring to a low boil. Turn down the heat, and simmer your sauce for 30 minutes.
 
Servings: 6

If your finished sauce is too thick, thin with a little water.
