Rice Salad Recipe
with Asparagus and Feta

This rice salad recipe is especially easy to fix. I really like the added vegetables, they add a nice texture and color to this salad recipe.

Use your leftover vegetables in place of the suggested asparagus and mushrooms in this salad recipe. Most any vegetable will work nicely in this recipe. Use your imagination - or whatever you have available.

When you are making rice, make extra to have on hand for this rice salad.

A perfect dish to take to a potluck or dinner party. It holds really well, and everyone always asks for this recipe!

Asparagus Feta with Rice Salad

 Asparagus Feta Salad
 
 
2 cups    cooked rice  
4 oz    sliced mushrooms  
12 oz    asparagus  
12 oz    chopped tomatoes  
1/2 cup    chopped red onion  
6 Tbs    chopped fresh herbs of choice (basil, oregano, rosemary)  
1/2 tsp    sugar  
1/2 cup    olive oil  
1/4 cup    sherry vinegar  
7 oz    feta cheese  
 
1 Cut the asparagus into bite-sized pieces. Steam the asparagus over low heat until tender, about 5 minutes. Drain and rinse with cold water to stop the cooking and to retain it's rich green color.
2 Whisk the oil, vinegar, sugar and the spices in a small bowl.
3 In your serving bowl, mix together the rice, all vegetables. Pour the herbed oil over all and mix lightly. Sprinkle with the cheese.
