Asparagus Feta with Rice Salad | Asparagus Feta Salad | | | | | | 2 cups | | cooked rice | | | 4 oz | | sliced mushrooms | | | 12 oz | | asparagus | | | 12 oz | | chopped tomatoes | | | 1/2 cup | | chopped red onion | | | 6 Tbs | | chopped fresh herbs of choice (basil, oregano, rosemary) | | | 1/2 tsp | | sugar | | | 1/2 cup | | olive oil | | | 1/4 cup | | sherry vinegar | | | 7 oz | | feta cheese | | | | | | | 1 | Cut the asparagus into bite-sized pieces. Steam the asparagus over low heat until tender, about 5 minutes.
