Perfect Roast Turkey

Roast Turkey

 Perfect Roast Turkey
 
 
12 lbs    turkey  
8 quarts    water  
2 cups    kosher salt  
1 cup    honey  
2 bunches    fresh thyme  
10   garlic cloves  
2 Tbs    cracked pepper  
2   lemons  
2 Tbs    olive oil  
2 cups    low sodium chicken broth, or use this recipe for no salt homemade broth  
 
1 In a large stock pan stir together the water, salt and honey. Bring to a boil over high heat and cook for 2 minutes. Remove from heat .
2 peal and crush the garlic cloves. Add the garlic, half the fresh thyme and the pepper to the liquid and let cool.
3 Wash and prepare the turkey for roasting. (remove the packaging and extra "pieces" packed inside.). Soak the whole turkey in the liquid brine for 12-18 hours, refrigerated. (I use one of the vegetable bins installed in the fridge for this.)
4 Preheat the oven to 350*. Drain the turkey from the brine and rinse really well. Dry the turkey with clean dish clothes, or use paper towels.
5 Halve the lemons, and squeeze the juice right into the turkey cavity. Toss the lemon rinds inside, too, along with the rest of the thyme.
6 Rub the outside of the turkey with the oil.
7 Place the turkey on a rack in a roasting pan and place in the oven. Roast for one hour, then baste with the chicken stock. Continue basting every 30-45 minutes until the turkey is fully cooked according to package directions. (a meat thermometer should read 180*, somewhere around 3 1/2 to 4 hours should be about right.)
8 When the turkey is done, let cool outside of the oven for half hour before carving to let the juices settle.
