Perfect Roast Turkey

Roast Turkey | Perfect Roast Turkey | | | | | | 12 lbs | | turkey | | | 8 quarts | | water | | | 2 cups | | kosher salt | | | 1 cup | | honey | | | 2 bunches | | fresh thyme | | | 10 | | garlic cloves | | | 2 Tbs | | cracked pepper | | | 2 | | lemons | | | 2 Tbs | | olive oil | | | 2 cups | | low sodium chicken broth, or use this recipe for no salt homemade broth | | | | | | | 1 | In a large stock pan stir together the water, salt and honey. Bring to a boil over high heat and cook for 2 minutes. Remove from heat . | | 2 | peal and crush the garlic cloves. Add the garlic, half the fresh thyme and the pepper to the liquid and let cool. | | 3 | Wash and prepare the turkey for roasting. (remove the packaging and extra "pieces" packed inside.). Soak the whole turkey in the liquid brine for 12-18 hours, refrigerated. (I use one of the vegetable bins installed in the fridge for this.) | | 4 | Preheat the oven to 350*. Drain the turkey from the brine and rinse really well. Dry the turkey with clean dish clothes, or use paper towels. | | 5 | Halve the lemons, and squeeze the juice right into the turkey cavity. Toss the lemon rinds inside, too, along with the rest of the thyme. | | 6 | Rub the outside of the turkey with the oil. | | 7 | Place the turkey on a rack in a roasting pan and place in the oven. Roast for one hour, then baste with the chicken stock. Continue basting every 30-45 minutes until the turkey is fully cooked according to package directions.
